Now you’d think I had been slightly over-indulgent across the weekend and probably wouldn’t feel the need for much more food.
So wrong.
Astounded by edible donations from friends and colleagues along with the other powerhikingdudes spent most of day sorting and selling cakes to raise money for Oxfam at a showing of Chasing Ice organised by some friends (thanks Ruth and Laura). Had to be a responsible salesman and know my products and there were 4 vegan options. 4!
I’d made 2 flapjacks (date and ginger and spiced mixed fruit with pumpkin seeds)

And then when I got home I was still hungry so made the enormous dinner below of veggie sausages, peppery mash, steamed brussels, purple broccoli and runner beans layered in chunky onion gravy.
