Mar 17th – Vegan Lent – Day 33

Mmm, Sunday cooking and a world food night to prepare for. Well, first up was soup using up the veg from last week that I haven’t managed to get through (swede, parsnip, carrots, and beetroot for a dash of colour).

So then onto salads: mine was coconut, mango, wild rice with basil, mint and coriander:
